How We Calculate This

This calculator uses the classic Scottish shortbread ratio of 3:2:1 (flour : butter : sugar by weight) to calculate precise ingredient quantities for any batch size.

The Ratio

  • 3 parts plain flour
  • 2 parts unsalted butter (cold)
  • 1 part caster sugar

Standard Batch (600g)

  • 300g plain flour + 200g butter + 100g sugar
  • Makes approximately 24 shortbread fingers
