How do I convert gelatine sheets to powder?

One standard gold-grade gelatine sheet weighs about 2g at 200 bloom, which equals roughly 2g of commercial powder (also about 200 bloom). So 3 gold sheets equals roughly 6g of powder — and a 7g Knox-style sachet is about 3 gold sheets. We convert by "bloom-grams" (sheet weight × bloom), so other grades come out correctly too: bronze sheets are heavier (about 3.3g) but lower bloom (125), while titanium sheets are heavier still (about 5g) at just 100 bloom. The calculator handles these differences automatically.

What is bloom strength?

Bloom is a measure of the setting strength of gelatine — higher bloom sets firmer. Gold (200 bloom) is the most commonly used in UK recipes. Platinum (250) is the strongest grade, while titanium (100) is the weakest. To balance this, the weaker grades are made as larger, heavier sheets, so every leaf grade sets roughly the same amount of liquid. That is why leaf gelatine converts about one-for-one by sheet count: 3 gold sheets, 3 silver, 3 bronze and 3 titanium all set a similar volume.

How much water do I need to bloom gelatine?

For powder gelatine, use 5 times its weight in cold water (e.g. 10g powder in 50ml water) and let it absorb before warming. For sheets there is no fixed ratio — simply soak the leaves in a bowl of plenty of cold water for 5-10 minutes until soft, then lift out and squeeze gently. The sheets only absorb what they need, so any excess water is discarded.

Can I substitute agar agar for gelatine?

Agar agar can replace gelatine but behaves differently. As a rough guide, use about 1/3 the amount of agar agar compared to gelatine. However, agar sets at a different temperature and produces a firmer, less wobbly texture. It is not a direct 1:1 substitute.

This calculator converts between gelatine sheets and powder using bloom-equivalence. It works in “bloom-grams” (sheet weight × bloom strength), because setting power is proportional to that product. Powder is treated as ~200 bloom, the same as a gold leaf, so 1 gold sheet (2g) ≈ 2g powder.
