How We Calculate This

At high altitude, lower atmospheric pressure affects how baked goods rise and set. This calculator applies standard adjustments for three altitude bands, modifying flour, sugar, liquid, leavening, temperature, and baking time.

Adjustment Bands

  • 900-1500m: +2% flour, -6% sugar, +6% liquid, -15% leavening, +15°C
  • 1500-2100m: +4% flour, -6% sugar, +6% liquid, -25% leavening, +15°C
  • 2100m+: +6% flour, -10% sugar, +10% liquid, -35% leavening, +15°C

The oven-temperature increase is held at +15°C across all bands. Authoritative guidance (Wilton, King Arthur Baking) sets the bump at 15-25°F (≈ +8 to +14°C) whatever the elevation — it helps the structure set before the cake over-rises rather than compensating for the lower boiling point, so it does not climb with altitude. These percentages are tested starting points; adjust one ingredient at a time and re-bake to fine-tune for your recipe.
