How We Calculate This
This calculator estimates the total icing needed based on the number and size of biscuits and the intended purpose. It then breaks the total into icing sugar, egg whites (or meringue powder alternative), and glycerine.
Usage rates
- Piping: ~0.15g per cm² (thin outlines and details)
- Flooding: ~0.35g per cm² (plus piping outline allowance)
- Coating: ~0.5g per cm² (thick coverage)

~85% icing sugar to 15% liquid (egg white or meringue powder + water).

Piping icing (stiff peak) holds its shape when lifted with a knife — used for outlines, lettering, and fine details. Flooding icing is thinned with water until it flows back together within 8-10 seconds — used to fill large areas within piped outlines. Coating icing is a medium consistency, spreadable like thick cream.
Yes. Meringue powder is a dried egg white product that gives consistent results and eliminates salmonella risk. Use approximately 4g meringue powder per 100g total icing weight, reconstituted with water. It also gives a slightly longer working time than fresh egg whites.
Glycerine prevents royal icing from setting rock hard. Add 1 teaspoon of glycerine per 500g of icing sugar for a softer set (2 teaspoons for a glossy finish on cake covering), as recommended by Dr. Oetker and Rainbow Dust. Do not add glycerine to icing for tiered cakes or structures that need to set very firm. It keeps the icing slightly soft and easier to bite through on biscuits.
Piped outlines dry in 1-2 hours. Flooded icing takes 4-8 hours per layer depending on thickness, humidity, and room temperature. For detailed multi-layer work, allow each layer to dry fully before adding the next. Low humidity and gentle warmth speed drying.
