How We Calculate This

This calculator estimates the total brine volume needed based on your jar count and size, then calculates the individual ingredient quantities using standard pickling ratios.

Standard Brine (per 500ml)

  • Standard: 250ml vinegar, 250ml water, 2 tbsp sugar, 1 tbsp salt
  • Sweet pickle: 250ml vinegar, 250ml water, 4 tbsp sugar, 0.5 tbsp salt
  • Quick pickle: 250ml vinegar, 250ml water, 1.5 tbsp sugar, 1 tbsp salt

Jar Filling

  • Brine fills approximately 45% of total jar volume
  • Vegetables fill the remaining 55%

These are typical UK table-pickle ratios and a representative 40–50% brine-fill assumption (you can override both under Advanced options for your own recipe). They are flavour guidelines, not a hard rule. The one figure that is safety-critical is acidity: for shelf-stable preserving, always use vinegar of at least 5% acetic acid and keep the vinegar fraction at 50% or more of the liquid. Quick (refrigerator) pickles are not heat-processed and must be kept in the fridge. When in doubt, follow a tested recipe and the FSA guidance on home preserving.
