How We Calculate This

This converter calculates approximate milk and butter quantities that together give a creamy, cookable liquid in place of cream. It uses the recognised milk-plus-melted-butter rule of thumb: the butter boosts the fat of plain milk so the blend behaves like cream when heated. It does not match cream exactly — the double-cream blend lands around 23% fat, richer than milk but below double cream's 48% butterfat — so use it for sauces, batters, and baked goods rather than for whipping.

Conversion Ratios

  • Double cream (48% fat): 100ml = ~75ml milk + ~25g butter (the 3:1 milk-to-butter rule)
  • Single cream (18% fat): 100ml = ~85ml milk + ~15g butter
