How We Calculate This

This calculator uses the standard UK pork roasting method: a 30-minute initial blast at 220°C (200°C fan, Gas 8) to crisp the crackling, then 30 minutes per 500g at 180°C (160°C fan, Gas 4) for the remainder. The base 30 minutes is the high-heat crackling stage — it is not part of the 180°C cook. A 2kg joint therefore takes about 2 hours 30 minutes.

Pork must always be cooked all the way through. The FSA target is the centre of the joint reaching 70°C held for 2 minutes (equivalent to 75°C for 30 seconds). Because a kitchen probe gives a single instant reading, pull the joint when the thickest part reads 75°C, then let it rest. Always check with a meat thermometer — timings vary with oven, cut and starting temperature.

Resting time is calculated at 1 minute per 100g, with a minimum of 15 minutes and a maximum of 30 minutes. Serving estimates assume roughly 300–350g of raw bone-in pork per person (UK butcher guidance); the default uses 300g, so adjust upward for hearty appetites or leaner cuts with less waste.
