How We Calculate This
Salt percentage in bread is expressed as a baker's percentage — the weight of salt as a percentage of the total flour weight. This calculator works both ways: from percentage to grams, or from grams to percentage.
The Formula
- Salt weight = Flour weight × (Salt percentage ÷ 100)
- Salt percentage = (Salt weight ÷ Flour weight) × 100
Typical Ranges
- 1.5-1.8%: Low salt bread, mild flavour
- 1.8-2.0%: Standard for most bread
- 2.0-2.2%: Well-seasoned, professional standard
- 2.2-2.5%: Flavourful, for enriched doughs
